Cheap & easy fish recipes please?

We are trying to cut out some of our meat intake and at the moment generally have 1 veggie day per week and 1 fish dish. We would like to eat more fish but at the same time we are on a budget and it always seems to be one of the more expensive weekly meals I make - so I'm hoping some lovely mumsnetters can suggest some cheap, nutritious and quick fish recipes. To give you an idea of the sort of thing we like these are the fishy meals we've had recently -

Haddock Mornay
Salmon & new potatoes with poached eggs
Lemon & Chilli Tuna Steaks with Noodles
Cod & cherry toms with parsley butter
Thai Fish Cakes

Just to complicate matters I will list all of the things DP won't eat - mushrooms, peppers, courgettes, aubergines, any shellfish.

I'm out of ideas - love fish pie but not for summer, I don't like battered fish. Surely there are loads of lovely recipes out there?

I buy Plaice, Dover Sole or Lemon Sole put the fillets in flour. Shake excess flour off then shallow fry in a hot pan with olive oil for about 1.5 minutes a side. I serve that with wild rice and cherry tomatoes and fresh lemon. I put a handful of cherry tomatoes in with the frying fish to soften them. Easy and quick.

I grew up in South Africa and a traditional recipe there is to make Pickled Fish - it's like a cold curried fish. You serve it cold with a salad and bread which is a nice option for the summer months. It is wonderful and definitely worth trying if you haven't eaten it before. I'll post the recipe below. You can use any firm fish, here in the UK monkfish is probably the best to use but it can be made with mackerel (personally I don't like mackerel though).

2kg firm-fleshed white fish
4 large onions, sliced
750ml vinegar
125ml water
20ml salt
125ml sugar
40ml curry powder
15ml tumeric
2ml cayenne pepper
1 piece root ginger, crushed
10 coriander seeds
5 bay leaves

Clean and fillet the fish and cut into portions. Combine all the other ingredients in a deep saucepan and simmer for 20 minutes. Add the fihs and simmer for a further 20 minutes, taking care not to break the fish. Remove with a slotted spoon and layer into a glass dish. Pour the curry sauce over. Leave to cool, then cover tightly and leave to mature in the fridge for at least 3 days before use. Serve with fresh crusty bread and salad. Serves 8-10.

Great ideas thanks - I've done my July meal planner and so far I'm doing a fish curry, portuguese fish, salmon & noodles, sardine bake, spicy mackerel and kedgeree, hopefully I'll try the others soon too. Would still love that caribbean fish pie recipe though jimmy...

I can throw in a recipe, using tinned fish.
Jansson's Temptation. I use tinned slid or herring as I can't get hold of proper Swedish Anchovies.

You need:
About 1lb of potatoes cut into matchsticks
A couple of onions diced smallish
4oz butter
2 cans of slid
bigish carton of double cream

You layer it like a potato bake, potatoes, onion, fish, seasoning etc until you run out. Pour the cream on top, dot on some butter and bake at 180.

I also make a fish pie using pastry instead of potato for a change, paella is always a good one (but I do add chorizo) and the kids love a warm fennel and white fish salad with bread.
