Easy (fruit?) Puddings

Am making my store cupboard standby pudding today (tinned peach halves, topped with crumbled ameretti biscuits, cinnamon and a little brown sugar, bunged in the oven for 20 min), which we like, but are getting a little bored with. It only takes 5 min preparation time (including rooting around in the drawer of hell to find the tin opener), and involves no weighing out or chopping up.

What are your lazy easy favourites?

Rice pudding is a pretty reliable standby in our house. 130g pudding rice in a saucepan with a tin of evaporated milk and then two more tinfuls of ordinary milk. Couple of tablespoons of sugar and a bit of nutmeg and in the oven for two hours. Lovely. I often put some stewed rhubarb or prunes with it.

Also frozen fruit crumble is another good quickie. Bag of frozen mixed fruit in a baking dish, sprinkle with sugar, then chuck some crumble mix over the top made by whizzing together half a block of butter with 6tbsp flour, 3tbsp porridge oats or muesli and a bit of sugar. I make this in big batches and keep it in the freezer. It freezes really nicely, not in a big clump like you might imagine so you can just take out what you need.

Tinned pears, vanilla ice cream and chocolate sauce made by heating up a bit of milk and stirring in a load of Nutella is another nice one.
