Do you cover beef when doing a roast???!

I've managed to get to 28 years old without ever doing a roast! Today is the first time, and although I more or less know what I'm doing (I think!), I don't know if I'm meant to cover the beef joint when roasting or not?

Well I don't personally as I like my beef to be medium rare ie nice brown crust on outside but pink inside, and the best way to do this is have a high temperature and not use foil. You could also rub with whole grain mustard, salt and pepper before cooking.

But my MIL wraps hers in foil as she likes her beef to be brown all the way through.

What kind of joint is it?

It's a topside rump joint, I like beef quite well done, so maybe Ill use foil.

I don't cover mine.
I use hugh fearnley-whittingstall "sizzle" then turn back method and it always comes out perfect
