Sounds like a very good idea to stock up on decent meals for yourself!
one of my fave chicken recipes is:
1 tablespoon olive oil
2 tablespoons butter
2 chicken breasts, cut into pieces
2 medium leeks, trimmed, washed and sliced
2 carrots, peeled and roughly chopped
2 tablespoons flour
1/2 pint chicken or veg stock
1/2 pint milk
sea and pepper
sweat the leeks and carrots in the butter and olive oil in a pan, add the chicken until cooked then add the flour and stir in the stock and milk, season with the salt and pepper.
simmer on hob approx 10 mins, then transfer to a casserole dish and cook in oven for approx 40 mins, and the chicken goes lovely and tender.
I think the amount above would get you at least 3 if not 4 largeish portions for yourself.
Its so tasty and creamy, I make this quite alot when I have people over and always get compliments! I usually add dumplings, but you could put this in a shortcrust pastry case, or add a puff pastry lid if you wanted to make it into a pie.
Other dishes I make to freeze in individual portions are:
lasagne (make up a whole one in a big dish, let it cool then portion off slices into those plastic takeaway style tubs in the freezer)
bolognese sauce (then add to jacket potato, pasta/spaghetti or rice)
Shepherds/cottage pie
chicken curry (pack out with onions, peppers, potatoes)
Chorizo meatballs (can let you have the recipe if you'd like)
I think you are right about reheating rice, but I think potato is fine from frozen, I also make up a big pot of mashed potatoes and put portions in the takeaway tubs- I take one out of the freezer in the morning and let it defrost so it's ready for dinner.
