Fry off a chopped onion and garlic clove.

Add lentils.

Add veg or chicken stock and simmer for a while.

Season.

Serve as soup with crusty bread and lots of melted cheese!

Regular lentils take like 20-30 minutes to cook and don't need any soaking. Tinned lentils are a bit of a waste of time.

That being said, I'd:

  • fry onion until golden, in a bit of olive oil
  • add a bit of crushed chilli
  • add lentils
  • add a tin of chopped tomatoes, and a bay leaf.
  • simmer until tomatoes have gone all soft.

Fry an onion and assome garlic, add finely chopped carrot and celery, soften, lots of pepper, cooriander, chopped bacon, and then either chiken in cubes or chopped Chorizo for a spicier finish, or chunks of gammon. Stock if not wet enough. Cook til all meat is cooked, then stir in a couple of tablespoons of Fromage frais. mmm, very warming and spicy!

Thanks

Stitch, it's cos I used to make baby food with them. They're organic ones and the only ingredients are lentils(obviously!) and water! Ds loved them with veg but now eats whatever we eat so don't have to make seperate for him.

We love tinned lentils - means i don't have to faff about cooking packet ones for half an hour first of all.

I add them to quorn mince, onions, tinned tomatoes and stock etc to make meat free shepherds pie.

Soak in bit of balsamic vinegar and oil, add chopped red onion and small chopped chilli (this is best done in the morning gives a really good flavour for tea time).

Grill a 'round' of goats cheese per person, fling on top and that's it.
