fairy cakes

i dont bake alot but i am quite good at making pies and quiches. i am absolutely useless at cakes. no matter what recipe i use they never come out right.

can anyone give me an easy foolproof recipe for fairy cakes?

I always use my gran's recipe for fairy cakes - hope this helps.

Weigh 2 eggs and use this weight for everything else (should be 4-5oz)
Same amount self raising flour (sieved)
Same of caster sugar
Same of fat - I always use Stork for cakes but you could use marg or butter or mix of both. I find butter alone makes them quite heavy so I think Stork is the way forward - not the pastry one as I made that mistake once!

Mix sugar and fat until pale - my gran always said this was the secret so I always do this a bit longer just for luck!
Add flour and eggs a little at a time (alternately) until mixed in.

Put into fairy cake cases (should make 12 depending on size of eggs).

180 degrees on middle shelf for about 15-20 mins. You can tell if they are done by putting a knife/skewer into centre of one of them. If it comes out clean they are ready.

I do similar to Domestic, but have started to add a splash of vinegar at the end of mixing to loosen the mix slightly. My mil has always done it and her cakes are lush! The other thing I do differently is use the one stage method eg bang it all in and give it a good mix rather than cream and fold.

3 eggs
6 oz SR flour, sugar, butter
1 tsp baking powder
Splash vanilla extract

Bung all in bowl, mix, preferably with hand mixer
Bung in cases in oven on 180 for 15-20 mins

Never ever fails :)
