Can I make a cake with granulated sugar?

Have run out of castor sugar- need a cake for tomorrow! It's going to be gluten free so will be slightly rough textured anyway- can I use granulated? Or better wait and rush tomorrow? Tia!

Yes absolutely. It will melt anyway in the cooking process so it makes no difference at all in my experience!

I have never used caster sugar to make cakes. My mum always told me it makes no difference and was a waste of money (is it more expensive?) She even refused to buy it when it was "required" for cookery at school and sent me with granulated.

She makes great cakes.

I always use granulated unless it states otherwise which is very rare. I didn't realise others didn't

I almost always use granulated, never noticed a difference and my cakes are yummy. Mum's cakes are brilliant and she never uses caster sugar.

Sling the granulated in your food processor, and hey presto: caster.

I always use demerara or muscovado no matter what the recipe says because I prefer the taste. have to beat it with the butter and egg a bit more, but cakes always turn out fine.
