I'm usually very good at this sort of thing but sleep deprivation has wiped out any modicum of common sense that was left. We have guests for the weekend, from France, that we haven't seen for 2 years; a couple and their 17 year old daughter, which will make me, dh, ds1 (7) and these three. So far I have managed:

Fri eve: Summer One Pot (chicken, potatoes and summer veg in a creamy sauce)
Sat lunch???
Sat eve: Spaghetti Bolognese
Sun lunch???

Need something tasty but economical for those two meals. Any suggestions gratefully received Smile

Fresh bread, cheeses, cold meats, salad.

Or

Jacket potatoes with chilli recycled bolognese sauce

Or

Construct your own fajitas, just fry off steak/chicken/onions/peppers and put on table with tortillas, guac and sour cream

Mmmm I love fajitas. We did that last time they were here though Smile

The jacket potatoes is a good idea though, I have some leftover bolognese in the freezer, and anything left from Saturday could be transformed into a chilli. Good plans.

If they're like the kind of visitors i have, it's all about spending time together and food is mostly incidental :o

smoked salmon and scrambled eggs makes an impressive looking easy breakfast or lunch (and if you buy the "scraps" it's not too expensive - 99p a pack in most supermarkets and 2-3 for 6 of you depending how much salmon you want!)

Sunday lunch - something you can throw in the slow cooker the night before (it's not like the weather is particularly summery!) or a roast chicken doesn't need too much attention.

Burritos using chilli or a mixed bean chilli can be assembled in advance then put in the oven an hour or so before you want to eat it.

Hope you enjoy your visit! I sympathise with the "stressing" about feeding people - I always find the balance between wanting to make something yummy and impressive vs not spending too long in the kitchen a difficult one. Particularly because my DP and I, plus many of our friends are "foodies"!

Thanks Squiggle, yep I am definitely a foodie and I like to impress! As it turns out I was wrong with the meals I need - they're leaving after breakfast tomorrow morning, so I only had to work out lunch. We ended up having butternut and chilli soup with home made bread. All worked out for the best in the end Grin
