8 inch tin, how much sponge?

Rather than making cup cakes for my son's birthday, I'm going to use a 8" round tin instead.

Do you think a 3 egg sponge, doubled for 2 layers, will be enough?

If the tin is 3" deep then I use a 5 egg mix.

I'd say 4 or 5. I generally use a 2 egg mix for a sandwich tin so double plus a bit for extra depth.

If I want to make a Victoria sandwich in my 8" tins I use 4 eggs (makes 2 cakes, one in each tin). However it doesn't make a huge amount so I sometimes use 5 eggs.

If it is one big tin ie quite deep my only worry would be making sure a cake that big (ie 5 eggs in one tin) is cooked through before getting over browned. I have a bobbins oven tho.
