150g butter, 125g self raising flour (although sometimes i need to add a little bit more!), 50g sugar. it makes quite a soft and slightly sticky dough. put on clingfilm and roll into a sausage shape wrapped in the clingfilm. pop it in the fridge for half an hour and then slice into biscuits and bake until cooked.

sometimes i add cocoa powder or chocolate chips

Well the classic recipe is the 6- 4- 2: 6 oz flour, 4 oz butter, 2 oz caster sugar.

Whizz it in the food processor, or rub butter into the dry ingredients by hand and bring together into a dough. You can press it into a round, mark out triangles and bake at around 160c until a pale golden, or you can chill the dough, roll out and cut into shapes, then bake.

Don't overbake; once it is slightly darker at the edges it is done. It wll harden as it cools.

Nigella's as modified by my 11 yo to fit in a 7 inch tin reasonably thickly.

150 g butter
150 g plain flour
75 g corn flour
75 g icing sugar
Bit of ordinary sugar to sprinkle on top.

Rub together to a rough dough (don't over work), press into a greased 7 inch tin.
Sprinkle with sugar.

Score into 6 wedges and bake 160°C for 45-50 min.

Nigella fussed about making it in to biscuits, but our little electric oven tends to burn one edge of things on a baking tray before the other side is cooked so this works much better.
