Following my goulash thread I now want to know how you make homemade curry sauce please?

Usually its out of a jar but would much rather do it on my own from scratch.

Help please, god I think I am turning into a domestic goddess

do you want the yellow or the red stuff, and what is it to go with? Chips or chicken or meat or veg?

wouldn't mind knowing about both hun if thats ok.

Sometimes we do use curry sauce for just chips and rice but mostly it is for meat curry

ok now I 'm having my cup of tea I can do this

For yellow, sweet and spicy curry sauce for dipping rather than cooking meat in:

This would make the same as a big jar of sauce
take 1 small onion chop it finely and fry in vegetable oil over a low heat for 5 minutes until really soft
meanwhile chop a clove of garlic and into a little dish put 1 teaspoon of cumin, the same of tumeric and 2 teaspoons of your favourite curry powder
When the onion is soft add a little more oil and turn up the heat slightly till it's sizzling, Then throw in the garlic and spices and stir around the pan for a minute and a half so all the aromas are released.
Then stir in 200ml of coconut milk, add a squeeze of lemon juice, a squeeze of tomato ketchup, a dash of soy sauce and more salt if you feel it is needed.
Add a further 150ml of vegetable or chicken stock, stir well, simmer for about 15 minutes with a lid on.

right got to take the kids out, will do the other one later, unless a more authentic MNer comes along in the meantime.

For a basic curry sauce, i fry the onions, in the spices e.g cumin corriander,garam masala,chili whatever I have around really oh and curry powder. You can fry chicken, meat prawn or veg at this stage. I then add chopped tomatoes and a bit of water, keep adding this a bit at a time. To make it sweet add mango chutney to taste, i usually add alot. near the end of cooking after you have brought to boil and simmered it, the longer the better, I add creme fraiche to make it creamy.

I would say early 2003

I know of people who can date pictures within a few weeks according to the length of his facial hair. I don't know them in RL I hasten to add.
