I wouldn't say that one is better than the other, I think it's all in the prep of the spud rather than the goose/duck fat.

i agree with Isla. It comes down to the right potato too, I personally think Goose fat is very overrated, but some I know swear by it

Goose and duck fat same job re crispiness, slight difference in flavour.
I lile beef dripping, and also olive oil pr pil seed rape with a bit of garlic. Whatever you use, par boil, then shake up with fat of choice and salt in drained pan w lid on, then roast.

Ah that's what I do, but don't tend to get crispy ones. Do you heat the fat up first before you put it on and shake or put it in straight out the jar?

maris piper or king edward
par boil til it becomes flaky just a touch, around 5 mins at boiling point
meanwhile put fat of choice in roasting tin to heat up until very hot
drain potatoes, put lid on and shake til they are 'chuffed up'
put potatoes in hot fat, coat potatoes then roast on 200.

NEVER EVER FAILED ME
