green lentils cooking

bought some organic green lentils loose at a local trade market but not sure how to cook them...
do I need to soak them overnight first and how long to cook for?

rinse them then cook from cold in a pan for at least forty minutes on a gentle simmer

they do need thorough cooking

or you can soak them overnight, then you dont have to cook them for quite a while.

Or soak them in the morning, for use that night.

add some leeks, tin toms, mushrooms to your cooked lentils, & you can have a very tasty lasagne. Yum!

oh blimey, if there are no instructions I would err on side of caution - would soak overnight. Agree with Zippitippitoess - cook for at least 40 minutes. Have to confess I go for the lazy option - tinned lentils from tesco/sainsbury!

Curried Lentil Pie ... Mmmm yummy!

2tbspn/30ml oil
1 large onion, chopped
2 cloves garlic
1tbspn/15ml curry powder
1tspn/5ml ground coriander
1tspn/5ml ground cumin
12oz/350g green lentils (I wash them, but don't soak or pre-cook them)
1.25pints/700ml water
4tbspn/60ml tomato puree
1 veg. stock cube
1 small green pepper, sliced
1 small leek, sliced
2 celery sicks, sliced
salt + pepper to taste

Heat oil, fry onion until transparent.
Add garlic, curry powder, coriander, cumin + cook for few seconds.
Stir in lentils, water, tom. puree + veg. stock cube.
Cover + simmer gently for 30 minutes.
Add pepper, leek + celery + mix. Cook for 20-30 minutes, keeping covered, until lentils + veg. are tender (may need to add more water - should be moist but not too wet).
Add seasoning.
Top with mashed potatoes flavoured with creme fraiche/soured ceam/nutmeg etc.
Cook in the oven until crispy and brown.

thanks all... and for the recipee - sounds yummy.
btw I normally buy them in a tin, but supported the local traders at an organic market and thought I would give them a try (v. cheap too!)
