I'm going to a party and said I'd bring something sweet. I'm leaving here at 3.30pm and I've got a children's party over lunchtime so no time for laborious or fiddly stuff. The hostess is a complete pro foodie, just to make matters worse!

Much as I'm tempted to do Angel Delight I think I'd better produce something decent - help!

Eton mess? You need meringues, some sort of soft fruit to whizz/mash up with sugar and cream to whip. Whip cream until soft peak stage, crumble up meringues, whizz or mash the soft fruit (strawberries and raspberries are traditional) with icing sugar to taste. Fold crushed meringues into the cream and then swirl through the fruit coulis. Put in fancy glass bowl and decorate with fruit and mint leaves.

Victoria sandwich. Dead quick and easy - and you can posh it up with decorations if you want, though I think it looks most impressive with jam in the middle and icing sugar over: v sophisticated and like a posh tea!

Instead of the angel delight, how about making a jelly mousse?

Put a small can of evaporated milk in the fridge. Take a pack of jelly rip it up and add a small amount of water, microwave for about 40s on medium power until jelly is fully melted. Make up the jelly to half a pint and then put in the freezer to chill quickly while you do the next stage. Using an electric whisk/mixer whip up the evaporated milk until it thickens and doubles in size, then gradually pour in the jelly. Pour into a large serving dish to set in the fridge.

You can top with fresh fruit ie. if you use strawberry jelly I would put on a bit of whipped cream and strawberries. With lemon or lime jelly I would normally put blueberries on the top etc etc.

This is an old recipe but I find that it normally goes down really well.

Or why not just make up a large bowl of fresh fruit salad - melons, strawberries, grapes, pineapple and add some sprigs of mint.
