Gah - my strawberry jam is actually strawberry juice with lumps

Not a disaster in the grand scheme of things but really quite annoying all the same.

In a fit of domesticity I decided to make strawberry jam this today while DD had a rare nap - and got carried away with myself. Was quite sure it had reached the setting point - jam thermometer as well as plate test, but now it's cooled and looks hopelessly runny.

Is there anything I can do to salvage it or have I just wasted the best part of an hour when I could have been mumsnetting scrubbing the floors?

Reboil with a bit of pureed apple to increase pectin content or buy pectin to cook in it.

You can reboil with some apple cores. However, if it's delicious I would keep it. I made a considerable amount of strawberry jam a couple of years ago and the wretched stuff was as runny as anything but my nieces adore it.

flatpackhamster but if it's runny it will spoil? Jam keeps because all the water is locked away, if there's too much free water it will grow mould pretty rapidly. I've done various experiments with jams (technically jams, although not always using sugar) and runny ones do spoil pretty quickly although will keep in the fridge for awhile.

I tend to use the bottled certo pectin and would expect DrSeuss's method to work well
