Banana cake.

Does anyone have a banana cake recipe which is healthy yet nice?

I have a healthy one, but it's pretty unpleasant. (Very heavy and oily).

I have several brown squashy bananas which need using.

OK Freckle I get your point. I mean healthier than other cakes. Perhaps with half wholemeal flour.

Tea bread would be great helsi.

Yum that looks nice. I can't remember - what exactly is the English equivalent of baking soda. Bicarb or baking powder?

Banana Tea Bread

225g/8oz SR flour
1/4 tsp bicarb of soda
pinch salt
75g/3ox butter
175g/3oz caster sugar
2 medium eggs
450g/1lb banabas, weighed with skin, peeled and mashed
100g/4oz walnuts, chopped (optional)

  1. heat oven to 180C/350F, Gas 4. Grease and line the base of 2ib loaf tin

  2. mix together flour, bicarb and salt

  3. cream the butter and sugar until pale and fluffy, add the eggs a little at a atime alternatlively with the flour

  4. stir in remaining flour, bananas and nuts and lpace in prepared tins. bake for about 1 and a 1/4 hours

  5. cool on wire rack.

baking soda = bicarb. Baking powder = baking powder.

The measurements in helsi's look less annoying, I hate the US thing of always using cups.

(The one I recommended doesn't end up tasting banana-y at all, in my experience. It tastes quite spicy and nice, though.)

Well I've made Helsi's but half way through I realised I was going to have to improvise because of a shortage of correct ingredients. This is so typical of me and I'm really hoping I haven't just wasted a load of bananas.

I had no bicarb so I used baking powder, twice as much. Mistake?

I also used a combination of plain white, wheat free and wholemeal flours. Mistake number 2?

Thirdly I used half caster sugar and half muscovado. Mistake numer 3??

It's in the oven. The proof of the pudding etc.

I think the 2nd and 3rd ones will be fine. But baking powder is stronger than bicarb, so you would really want to use less, I'm afraid. It might be a bit tinny-tasting.

Why not make banana breakfast bars instead
150g butter (flora light)
75g caster sugar
3tbs honey
350g porridge oats
50g chopped nuts or seeds (pumpkin and sunflower)
Pinch of cinnamon
Half teaspoon baking powder
2 large bananas mashed or three medium

melt sugar, honey, butter add porridge, cinnamon and baking powder, seeds and bananas mix up and place in baking tray.
Bake for 20-25 mins on 180 or gas 4
These are really nice and fairly healthy

Well, I've made the recipe based on helsi's and it's absolutely gorgeous. Moist, light, just the right amount of sweetness. I'm not sure how long it'll last.

Banana bars are in the oven. I have so many bananas this week for some reason, so put in a search for banana bread, and found 2 great recipes on this thread. Thanks!

just to say, I made the banana nreakfast bars this week and my dds love them, they have been in lunch boxes all week. I asked them this morning if I should make them again (you know how they get bored) and they both said yes. What a great way of getting seeds into them!!

I've just put the one that helsi posted, in the oven.

Not tried the flapjacks as the kids are so fussy, they would spend the afternoon picking the bits out.
