Butternut squash

I have two that I need to use up. I don't like to spend ages cooking but I need side dish recipes that will go with fish and pork chops. Any quick ideas gratefully received.

Ok thanks. Sage is a good idea. Makes it more interesting. Why would it not go with fish? I'm not being rude I just don't know.

I haven't really done butternut squash since dd was weaned 7 years ago and I'm a bit stuck.

Butternut squash lasts for ages, is it just near its sell by date? I keep mine for weeks after I buy them & they are fine!

I really enjoy roast butternut squash with salmon - they go well. Not sure more 'fishy' fish would.

But - you don't need to 'use them up'! When you grow and harvest them you can keep them in a cool place for literalyl months. I've had ones that I've cut, and which have kept for weeks (monsters that my parents grew that would feed an army Grin)

It's also really, really nice in a veggie curry.

I've had them for about two weeks. They were a substitute on a veg delivery and I've been a bit lost. We are a family of 5 (1 teenage ds ganite ) and they aren't that big so I was going to do them both. I set myself the challenge of doing them today and then got stuck. Blush

I love butternut. Mash is good but so much more you can do.

For side dishes, try roasting and serving with toasted pine nuts, olive oil and a little goats cheese or feta.

Halve lengthways and bake with seeds scooped out the add a mixture of cooked spinach and ricotta, sprinkle with Parmesan and warm through (this works best if you scoop out some of butternut and add to spinach ricotta mix but is a faff so not essential. But if you do, scoop out flesh along the length so you can serve the butternut in slices).

Roast in chunks with onion and tomatoe and garlic. You can add other veg too if you like but for a side dish, not really necessary.

Roasted butternut squash cubes are nice tossed with a harissa and lime dressing and served over couscous. I've got a good recipe somewhere, will post if you like.

This curry recipe is also delicious and freezes well.

Toss BNS cubes, chopped red pepper and wedges of red onion in olive oil and roast for about 40 mins until they're soft.

Make up some couscous.

Make the sauce: about a small mugful of olive oil, a decent squirt of tomato puree, juice of two limes, small tsp of chilli powder or harissa paste, sea salt and 2-3 crushed garlic cloves. Mix well. It does tend to separate. You might want a bit less oil, depends how much couscous and veg you're using.

Combine the veg, couscous and sauce. Add a good handful of chopped black olives and scoff.

You can also add dry-fried chunks of halloumi to this, to good effect.
