Can I mix half and half normal and whole meal self raising flour with no ill effect?

trying to make ds' favourite banana loaf healthier. I've reduced the sugar as far as I can get away with (he spotted a 50% reduction but hasn't noticed 25%) and now want to try healthier flour. Can I just follow my normal recipe but mix the two flours?

Sure. I often make things (pancakes etc) with half ordinary, half wholemeal. It will be a bit denser, but probably not really noticeable in a banana cake.

Yes, I do it too.

You could try adding/upping vanilla essence if you want to try again with reducing the sugar further?

good idea re vanilla essence. I baked the bananas to make them more naturally sweet and reduced the sugar by half but the cake was too dense and brown for mr fussy - dh and I scoffed the lot!

Sounds good. I usually experiment with reducing the fat content too, it's amazing how much you can knock off sometimes.
