Humour factor only - if you know how to cook - mince beef

Young(ish) mum working from a resource of a freezer
Tonight (monday night) taken out mince beef (fairly large portion but frozen) - babies just in bed, husband snoring - just about to taken washing in from line (I am so grateful for this good weather everything dries so quick and no need to use tumbledryer)
Anyway I am a bluffer at cooker (means I am rubbish!)
Please help - I only ever saw my mother come home from work 6pm-ish and fry up onions and mince beef before serving with potatoes and veg - it is now 11pm and i have frozen beef
Aside from me not living up - can I put frozen beef in slow cooker with veg and stock and let it defrost overnight (there will be water/liquid) and then turn it on tomorrow or is failing to "brown" the mince and to use onions fatal.
I will get up extra early tomorrow to brown the mince tomorrow (although I dont have any onions but I know about sealing in the flavour)
Any thoughts much much appreciated i have no one else to ask (including my own mum) thanks

Leave it to defrost overnight. Brown it in a saucepan in the morning while the slow cooker warms up. No need to use any oil just keep stirring it until all the redness has disappeared. I add onions and chopped garlic but it will be just fine without.
Then put it in the slow cooker on low. I usually throw in a tin of chopped tomatoes and some mixed herbs or oregano and serve with pasta or rice. Potatoes will be fine too.

As above, but I add gravy, peas & carrots instead of tomatoes.

Defrost over-night.

Fry onions in pan, take out and put to one side.

In same pan fry meat to brown.

Put onions back in with the meat, then add 1 tablespoon to tomato purée, 1 teaspoon of curry powder, and a container of Sainsbury's Basics chopped tomatoes (31p) and a glass of water. Mix all of it then leave to simmer for an hour. Remember to stir or it sticks to the bottom.
