Something like pavlova/eton mess, or perhaps a lemon roulade with a light lemon & mascapone filling perhaps?

I'm travelling with pudding tomorrow and am making a baked Hungarian cheesecake and chocolate brownies, and have asked the host to provide ice cream to go with the brownies. Grin

Both very transportable. If you do do Eton Mess, take everything separately and assemble there.

Nigella has a chocolate pavlova which always impresses although it is so easy. Kids love it too. It is dead easy, add 3 tablespoons of cocoa and 50g of dark chocolate chopped. This for a pavlova with 6 eggs. Yummy with raspberries. Makes no difference if it cracks a bit when travelling.

Lime jobby -

100g plain digestives
85g butter
4 limes
1/2 a lemon
300ml double cream
400g can condensed milk

20cm loose bottom tin

Crush biscuits and mix with melted butter add cocoa powder for chocolatey base. Put in fridge to set. (Experience has taught me that using choc digestives makes the base rock hard. Experience has also taught me that you don't need to bake the base unless you particularly want to)

Whip cream and about half of the condensed milk and add zest and juice of limes and lemons. Add more condensed milk to your taste. You can add a bit of green colouring if you like.

Pour over base and leave to set in fridge.

Looks gorge with white choc buttons scattered on top and a few arty strands of lime zest.

Easy peasy and my most requested pud!
