Too much mackerel. What shall I do with it.

Culinary suggestions very welcome. Could I do potted mackerel do you think?

Have about 6 fillets when I wanted 2.

Not sure about potted mackerel, but according to my favourite cookery book in the world (Mark Bittman's How to Cook Everything) you can marinate it and it will keep for a few days in the fridge.

He suggests breading and lightly frying the fish first. Then lay the cooked fillets side by side in a gratin dish.

You then:
Heat about 1/4 cup of oil in a pan and add 10 cloves crushed garlic, 2 bay leaves, 1 tsp dried thyme (or a few sprigs fresh), 1/2 tsp cayenne. Cook for a minute or two until the garlic is coloured then add 1 cup red wine vinegar (I expect cider/white wine/balsamic would all be fine). Bring to the boil and simmer for a minute. Add 1 cup red wine, bring back to the boil, simmer for about 5 minutes. Add 1 cup water, bring back to the boil and cook quickly to reduce the liquid by half.

Pour the liquid over the fish, let cool to room temp and then refrigerate.

Full disclosure - I have never tried this, but I've probably made 30 or so recipes from this book and it hasn't failed me yet.

Cook in the oven in a little water, with a slug of vinegar and some mustard. Lovely. Think it was from the Radiation Cookery book given away with Radiation gas cookers in the '50s.

Thank you! We had some of it grilled tonight and will be making fishcakes with the remainder. We may marinade it next time, that sounds lovely.

i do a makerel dish with new pots, cut new pots up to one pound coin thickness, put i a dish with mackarel that you fork through to break up into bits, add some cream and milk, stick it in the oven for an hour and serve with some green veg, its yummy Grin

even better with smoked or peppered mackarel :)

I will definitely be trying that 5madthings, have finally got DH eating smoked mackerel (not quite there with fresh yet!) and I think anything with cream is something he could get behind!
