Seems I've accidentally discovered a fail safe way to make perfect Yorkies, so thought I'd share :)
I should add, that though I can cook/bake most stuff very well, BUT no matter what I do Yorkshire puds have always been a bit of a nemesis of mine
& in more recent years I've sort of perfected them, but its still very hit of miss as to whether they behave themselves or not, one week biscuits, the next huge big fluffy perfect things & no change in anything I do
DD likes the crispy outside & now loves them for school packed lunch instead of bread, so thought I'd use my Petite Four tin instead of the normal muffin/pudding tin so there is more of the crispy outside IYSWIM - every week since then they have been better than perfect - huge big fluffy things, better than anything I've eaten, let alone made
I thought it was just a fluke & they would revert to biscuits at some point - that was until yesterday, when due to juggling with migraine whilst trying to cook Sunday lunch, I forgot to put the oven on properly, so the fat was hot, but not near hot enough, but I didn't notice until I'd filled half of the tin as I was distracted - realising I was certain I would have pancakes - NO, I STILL had perfect Yorkshire puddings, which in theory is impossible, but thinking on it further I think due to the smaller size of the petite four holes, the heat gets to the batter better & seems if the mix is right, its fail safe :)
