Not peeling vegetables ...

Does anyone else not peel carrots, parnips, potatoes or the sides off runner beans?

New, spring vegetables you don't really need to. I do it on old potatoes and carrots. Otoh there's the issue of pesticides and how about half or more is concentrated in skin...

I don't eat runner beans.

I peel parsnips if they have thick skin. Otherwise, not too much peeling going on

I rarely iron either.

Runner bean sides -- ours are big enough that they tend to be too fibrous to eat.

Other stuff I sometimes don't peel, depends on condition or if organic. Skin has the most nutrients but highest pesticide content, too.

Depends on the use of the potatoes as to wether I peel or not.

I peel turnip (swede to the English?), parsnips and onions.

I do not peel butternut squash, carrots or beetroot.

It depends on how I'm using them.
Turnip has to be peeled, I don't peel butternut, but I don't eat the skin, I cook it whole in the oven, then use the flesh.
Parsnips I peel, but then the recipes I use for them need it. I peel old gnarly carrots, but not young ones.
I've never cooked beetroot, so can't answer on that.
I don't peel runner beans.

I love roasted swede but hate peeling it. That's one veg you pretty much have to peel though isn't it ...

I do not peel my fruit/veg (where possible), thats where most of the nutrients are. However, I do wash/scrub them with veggie wash or bicarbonate of soda and water.

I don't peel any of those unless I absolutely have to. Give them a really good scrub with a stiff brush though (ooo matron!).

I scrub swede, but I chop of the knarly bits, and I sometimes peel as they are often from dad's allotment so a bit muddy and holey!

If you roast butternut you don't need to peel at all, the skin softens as well.

I got a brilliant idea from an old book of Jane grigsons I think; I scrub ALL the veg. and put them whole ,pointy end up, in a large steamer, then steam until soft (keep testing with a sharp knife or skewer) and THEN remove the skins which come off easily and leave the goodness 'cos they come off so easily. This is fab. because the vitamins are left behind; with the carrots this is esp. important as they should be cooked for our bodies to obtain the beta carotene from them. I always buy organic or unsprayed veg. but this would work fine on normal veg. as well.

nappyaddict I cook them S.P.'s like ordinary potatoes as above but for much less time 'cos they are more delicate.
