Modelling chocolate

My new viewing obsession is the American programme 'Cake Boss'. I love the incredible cakes which feature in the programme and I have to admit I find the whole thing fascinating (some say I need to get out more!).

One question for those experienced cake decorators out there. What is the point of modelling chocolate? Does it have properties that modelling paste doesn't or is it just a matter of what you prefer to use? I have seen it for sale in specialist shops, but kind of ignored it as I didn't really know what it should be used for. In the programme they seem to make a lot of figures out of it. Is it easier to use than modelling paste? Do you paint it or just use it for things which are a naturally brown colour?

Modelling chocolate comes in white, milk and dark and you can colour it. It tastes much nicer than sugar paste/modelling paste and is obviously suited better for covering/decorating chocolate cakes. You can mix it 50/50 with sugar paste to make a chocolate sugar paste.

It can be quite tricky to work with at first, it's more difficult than sugar paste/modelling paste.

I've seen modelling chocolate for sale too but not branched out and bough it yet!

That's very interesting, thanks midori. I think I'll give it a miss until I get more experience with using modelling paste.

Buddy's on twitter hermione! I'll have to look into that. I've also been watching the competition one he does ('Next Great Baker' I think it's called) which is fun too. The sheer scale of the cakes they do is amazing!

The whole family are on there! (nods sagely, in a geeky baker way). Next great baker is fantastic! I love that most of them are just self taught hobbiests.

This was my first attempt with modelling chocolate. It was a b to make and took absolutely hours, which also involved taking all the chocolate off and starting again, but it worked out OK in the end...
