What do I do with Asparagus?

DP has brought a load home from work for me to try. I haven't a bloody clue what to do with it! How do I cook it?

best thing to do with it is snap off the woody bit at the bottom, steam or lightly boil until tender and eat dipped in melted butter with S&P

Steam it for about 4/5 mins
I usually make a quick butter sauce with a big dollop of butter, lemon juice, parmesan and black pepper and then just dip the spears in.

Also waitrose has a great recipe for asparagus risotto. DELICIOUS

I snap the stiff ends off and into a pan with lots of melted butter and a dash of oil

quite hot to start with and keep it rolling about, about to minutes and then put a lid on and let it steam fry over a low heat for a minute or so more depending how thick it is

shave parmesan over it and dribble over some balsamic vinegar!

I think it's overrated.
However, dipped into soft boiled duck eggs works.

or drizzle in olive oil, plenty of salt and stick it in a hot oven for 10 mins - delicious!

Blanche for a few minutes and then wrap in pancetta. Into oven for 15 minutes, grate some pecorino over before serving.

Prep, cook and serve with hollandaise.

Dunked in soft boiled eggs, or served with poached.

Or send it all to me. This is the best option tbh.

It's very good with eggs -e.g. instead of making Spanish style omelet with potatoes use asparagus.
Also very nice in a risotto- with lemon and herbs and Parmesan and maybe a bit of ham or bacon.

Netto I bought some duck eggs for that specific purpose the other day but was told that duck eggs carry a high risk of salmonella when soft boiled due to their porous shells. I googled it and apparently, my source was correct.

I 'chickened' out and bought some hens' eggs to did our asparagus into. The duck eggs made a lovely egg custard though.

Really, I've never heard of that.
We always have them for special occasion breakfasts, softly scrambled with smoked salmon, or with soldiers made with poncey bread, or the asparagus.
Maybe I should be a bit more careful?

Coincidentally, I had boiled eggs with asparagus soldiers for lunch today. With lots of butter and salt. Mmmmm......

I come from the Vale of Evesham, so asparagus is in my blood (but apparently it has been a poor season for English asparagus).

Terrible for the gras Cointreau - the cold weather has stopped it growing. We live in the Vale, and even the festival was cancelled

I like asparagus lightly griddled with a poached/basted egg, or in rissoto with some bacon.

Netto, if you've been cooking them that way and not had a problem, then I reckon some people are just a bit over cautious.

Steam them, and then eat them with fried eggs.
Or, steam them and eat them with mayo (possibly home made)
Make risotto with them.
Put them in an oven dish with rock salt. When crispy, take them out of the oven and add shavings of Parmesan cheese.

I like it steamed with melted butter and finely grated pamesan...maybe a poached egg too. The simplier the better!

Griddle fry them in olive oil with a nice salmon fillet and some chop up red chilli. Serve with cous cous with corinader and chopped up vine tomatos and a dollop of creme fraiche. They have that lovely charred taste yummy, the creme fraiche takes away some of theheat from the chilli. Asparagus has a diuretic effect and is very good for you- your piss smells like asparagus after eating it though Blush
