help me meal plan for the next 11 nights! want to use up what we have before our holiday!

Going on holiday in 12days. In order to have some guilt free spending money at the airport for giant tobelerones and booze sunglasses and stuff, I intend eating up what we already have and keeping as much of our food budget for next to weeks for spending money.

We are a family of 4 (me Dh, ds1-age 6 and ds2-age4). Boys are good eaters, not fussy and like big portions. Generally we all eat the same.

I need 12 main evening meals out if stuff we have with limited shopping! This is what I have-

Freeze
Prawns, quorn pieces, quornsausages, Bacon, pork loin steaks, 3chicken breasts, random odd bits of meat and fish, quorn mince. Sweetcorn, peas, green beans, various tubs of leftover cooked veg. Also a few anonymous meals (bolognaise/chilli)

Fridge:
Cheddar(lots), eggs(10), mushrooms, peppers, onions, cabbage, lettuce, cherry tomatoes, garlic, avacados, smoked mackeral, mozzarella, 2 butternut sqaushes, crown prince squash, 1sweet potato, 2 baking potatoes.

Cupboards-
Loads if white and brown rice, rissoto rice, polenta, red lentils, pasta, spaghetti, baked beans, kidney beans, chick peas.

Loads of flour, herbs spices etc.

What do you think? ! Can you think of some tasty meals with this stuff?

Risotto with anything, curries, frittata with all the eggs, veg and cheese, soup with butternut squash, spaghetti carbonara with eggs, bacon and parmesan and kedgeree.
Nigel Slater does lovely (but calorific) dish with smoked mackerel layered with potatoes and cream and a bit of horseradish.
I could go on.....

Haven't made kedgeree for years so that would be lovely.

Curry with the lentils. Carbonara! Yum!

Fish pie with random fish and the prawns

'Fridge jambalaya' I do this fairly regularly to clear my fridge. Rice in a big casserole, with veg (peppers, mushrooms, onions, sweetcorn are perfect), plus a tin of tomatoes and water to cover the rice and as much spice as you like. Can add protein such as cooked chicken or pork, prawns, bacon. Oh, and I often sling a tin of kidney beans too. Avocado salad on the side

Nigel Slater's smoked mackerel sounds yummy - which book is that recipe from? I've got a couple but not seen that one before and really, really want to try it

I've done the Nigel Slater one, but not with horseradish - basically just pommes dauphinoise with chunks of smoked mackerel included and it was divine.
Use some of the eggs for a Quorn sausage toad in the hole.

Quorn pieces/chicken + mushrooms + peppers + onions + avocado + cherry tomatoes - crying out for fajitas there, with guacamole & cherry tomato salsa.

Jane Grigson's cabbage in the Troo style is yum, but you'll need proper sausages. Very simple - alternately layer shredded cabbage and skinned sausages in a greased casserole pot, seasoning each layer of cabbage well, and dotting with butter. Then bake slowly in a moderate oven. Really delicious. It wants a couple of hours in the oven.

That is loads of ingredients!

Cavey beat me to it with the fajitas suggestion.

Quiche- eggs bacon flour onion with salad - lettuce toms etc- with baked potatoes.

Prawn and egg fried rice- onions rice bacon prawns peas sweetcorn

Spag bol made with quorn mince

Seafood risotto with prawns/odd bits of fish

Stuffed butternut squash- cook rice then mix with roasted veg, stuff in squash, top with mozzarella and bake

Home made pizzas using the flour, bits of meat mushrooms and mozzarella

Wow!so many ideas! Will definitely try the Nigel slater recipe. Will Google later. Loads of other good ideas to. The Jane griggson cabbage recipe sounds good, and I have found a few pork sausages in the freezer.

Should keep the meals interesting, thank you!
