my scones are flat. :-(

I've been put incharge of scones for.an afternoon tea party and I'm failing! I've tried not rolling it out, not twisting my cutter and adding yogurt instead of.milk and they are still flat. Yogurt ones popped up a bit more but they're not like the big puffy ones you see in cake.shops! What recipes are best for you and/or do you have any tips?

Are you adding bicarbonate of soda?

Self raising yes but my recipe didn't say bicarb. Have you got a good recipe?

This is an easy no-fail recipe-delicious scones!
Pre-heat oven to 425 F/220C/GAS7
225G/8oz self raising flour
1 level teaspoon baking powder
50g/2oz margarine
50g/2oz caster sugar
1 egg and approx.4 tablespoons milk beaten together

Sieve flour and baking powder in a bowl and pop baking tray in oven to heat(this makes a big difference I think).Rub in the margarine until mixture is like fine breadcrumbs. Stir in the sugar.Make a well in the centre and add the beaten egg and milk.Mix to a soft dough using a fork.Knead until smooth but take care not to overknead- (this will result in tough scones.).Roll out onto a floured table to about three quarters of an inch thick-they really need to be quite thick in height in order to be a decent size scone. Leave to relax for about 5 minutes.Remove the baking tray from the oven and grease lightly.Place the scones on it well apart.Bake in the oven for 12 to 15 minutes.Cool on a wire tray.
I usually double this amount to make approx.20 scones but then again it depends if you like large or small scones-I usually cut them in triangles/squares with a knife as it means there is no waste scraps leftover. Hope this helps you Waitingtobeamummy.Good luck.Smile

I don't bother with the cherries but Jamie's scone recipe is fab.

You need cream of tartar and buttermilk too. Google Rachel Allen's recipe. Biggest, fluffiest, lightest scones I've ever had; absolutely showstopping!

Handle the dough as little as possible.

When you put the egg wash on be careful not to let it dribble down the side.
