Help? What do I do with a pheasant?

Please tell me what I can do with just one pheasant?

It's in my freezer, defeathered and head/footless but I have no idea how to cook it?

How do I ensure it doesn't dry out?

Are there any other things to go with it that aren't root vegatables.

Or some kind of pheasant surprise pie?

Help, please, thankyou all so much in advance :o

Defrost and roast on a slice of bread for about 50 mins

Or make a casserole.

You need to slow cook it with liquid, so pie, casserole or pot roast - anything else will probably be dry. Try a coq au vin recipe - mushrooms, bacon, wine, cream etc.

Normandy pheasant is lovely, sure you can find recipe online, was in my Mums Cookery Year book. It's casseroled with apples.

Have never bothered with the whole bird.

Just slice the breasts out, honestly, the ready is hardly worth bothering about.

Google some recipes, there are some nice ones braised in sherry, or cider or white wine (spot the theme...)

how many would you like to feed with it?

if you want to roast i'd stuff it with a fruity mix of brandy-soaked apricots/finely chopped shallots and the wrap it in best streaky bacon - roast in hot oven for 30-40mins

It's for 2 and I was trying to stay away from alcohol ones ex alcoholic I know the alcohol is cooked out but I try to stay away from the flavour aswell.

Coq au vin/ normandy sound nice thanks, will try with non alcoholic juice.

Thankyou for the vinegar tip, I was worried fruit juice wouldn't be enough.

The parma ham and ricotta one looks fabulous and what I was thinking but couldn't put my finger on. Light and fresh.
