Vegetarian burgers and sausages

I am looking for recipes for veggie burgers and sausages. The type made from vegetables and perhaps pulses or cheese rather than the pretend meat kinds.

My standard recipe for veggie burgers....

5oz cooked beans or chickpeas (preferably cooked from dry but, if canned, well drained and allowed to dry)
1 egg
1oz rolled oats
1/2 carrot, grated
seasoning

  • Blitz the beans in a mini food-processor or mash with the back of a fork.
  • Stir in the other ingredients and then set aside for 20 minutes to allow the dry ingredients to absorb the egg
  • Finally add your own flavouring/textures according to taste... leaf coriander/parsley, chilli flakes, toasted cumin seeds, chopped nuts, curry powder, pumpkin/sesame seeds....anything you like.
  • Shape into patties with wet hands and shallow fry in a little oil on both sides until firm and browned. (If your mixture is too wet to handle, spoon rounds into the pan and cook gently, shaping them up with turner as they firm up)

Makes 2 large or 4 small burgers

Glamorgan sausages

1 leek
1 tbsp butter
1 garlic clove
140g cheddar cheese, grated
140g fresh white breadcrumbs
bunch of parsley, finely chopped
½ tsp English mustard powder (I think you could probably substitute prepared mustard)
1 egg
olive oil
salt and freshly ground black pepper

Finely slice the leek, sweat it in butter until soft. Crush the garlic, add to the leeks, and cook for another 5 minutes, then set aside to cool slightly.

Combine the cheese, breadcrumbs and parsley in a large bowl with the mustard powder and a little salt and pepper. Add the leeks. Beat the egg and stir into the mixture.

With your hands, shape the mixture into sausages, balls or patties. Cover with cling film and chill for 30 minutes.

Heat the oil in a frying pan and gently cook the sausages on a medium temperature until browned all over and cooked right through.

I've tried all of these with great success, they all freeze well too.
curried lentil, rice and carrot burgers
Mushroom burgers
Spicy mexican bean burgers
Carrot and sesame burgers

My recipe is-
2 tablespoons of [uncooked] red lentils, boiled till dry and mushy. Add 1 teaspoon of crunchy peanut butter, salt, dried herbs and paprika to taste [or whatever spices you like]. Leave to cool and stiffen up. Shape into burgers or sausages, then fry.
This amount makes 1 burger or 2 little sausages.
