gingerbread/ginger biscuits

Anyone got a nice, easy, foolproof, very gingery recipe for these? Feel the urge to make star-shaped bikkies and decorate our rampantly artificial tree. Or just eat them. I have Nigella's general biscuit recipe but I really want ginger. And it goes with my hair.

I made these soft gingerbread biscuits last week. THey are delicious.

100g/4oz butter
6tbls golden syrup
100g/4oz golden caster sugar
1 egg, beaten
2tsp ground ginger
275g/10oz flour
1/4 tsp salt
2tsp bicarbonate of soda
50g/2oz preserved ginger, drained and chopped

  1. Heat oven to 200C/400F/Gas 6.
    Lightly grease 2 baking sheets.

  2. Cream butter, golden syrup and golden caster sugar together in a mixing bowl until light and fluffy, then gradually whisk in the egg.

  3. Sift the ground ginger, flour, salt and bicarbonate of soda into the creamed mixture, then mix together until it forms a soft dough. Fold in the chopped ginger and blend well.

  4. Take tablespoonfuls of the dough and place them on the baking sheets, spacing them about 5cm/2in apart to allow for spreading during cooking. Flatten slightly with the back of a fork, then bake for 5-8 minutes until light golden brown.

  5. Remove the baking sheets from the oven and leave the cookies to cool slightly before transferring them to a wire cololing rack using a palette knife. Leave to cool completely on the rack.

The recipe card says it makes 60 and they are only 45 calories per biscuit.

Does anyone have any egg free recipies for gingerbread men as DS is allergic to egg and so far I can't find any

Greta ecipe as don't have accesss to balck treacle . Cna you substitute fresh ginger for preserved and if so in what quantity? (Need something for ds' school Christmas party next week)

alison222, the delia recipe in my earlier post does not have any eggs.

You can leave out the preserved ginger idf you have not got any. I made sdome today and left it out, they were just as nice and the were no worries about he kiddies choking on a piece.

HI Allison, I just use Orgran's "no egg" in place of the egg and most things turn out fine. A bit more syrup or treacle would substitute an egg in any biscuit recipe if you can't find the "no egg", but JanHR's recipe looks good.

Where do you get "no egg" as I've heard about it but never seen it?

Me too, I was charge £1 for a gingerbread man this morning, but that is London prices and ds was overjoyed .. does anyone else think that is excessive?

Made those ginger biscuits but think I may have gone a bit wrong! Did you mean a teaspoon of dough per biscuit instead of a tablespoon only I used less than a dessert spoon and they came out about 3" in diameter !! Also got less than 30. However they were very tasty and as I had made them for ds'school Xmas party I just stamped out stars etc from the rounds.

Hi Liz,
Recipe says tablespoon, but I also think they meant a teaspoon.
I made them since posting the recipe and used a teaspoon, I can't remember how many it made but is was closer to the amount stated.
