Does the alcohol completely burn off?

I'm making bollix aide and it cooks for ages...

I dont think it is to do with how long it cooks for, I think it has more to do with heat as to wether it burns off. You just need it at a high heat untill yoyu no longer smell the alcohol.

I do cook with in for my children but not when they were babaies. aslo my ex alcoholic bil will not eat anything with wine my sis cooks in slow cooker as he can still smell/taste the wine but he will eat gravey and thinks cooked on the hob as he is more convinced it is burned off during cooking as he can taste the difference.

I think the food retains a very small % of alcohol but nothing to get worried about unless you are allergic or have a religious or otherwise objection to alcohol.

I use wine in my cooking and allow my kids (age 4, 10 and 12) to eat it. Wine wont burn off in a slow cooker at all, as it does not get ht enough.

See page 12 of this US Dept of Agriculture paper: www.nal.usda.gov/fnic/foodcomp/Data/retn6/retn06.pdf If you stir the wine in and cook the food at a simmer for 2.5 hours, 5% of the alcohol will remain. If it's only 1.5 hours, 20% will remain. So, if it's one small glass of wine (one unit of alcohol) in a meal for four cooked for 2.5 hours, each portion will contain 1.25% of a unit. Which is basically nothing.

Additional question on the subject - if the ALCOHOL does in fact burn off does that mean that a large % of the CALORIES also burn off?

It's on a hob so cooked at a high heat, and will bubble away for a good few hours, just don't want to intoxicate my 2yo! :-)

HipHop I doubt it makes any difference to the calories. Did you ever calculate the calories in a peanut at school by burning it to heat water? To burn off calories I think you'd actually have to burn the food up.
