Stinky stilton suggestions?

I've got some very stinky stilton still leftover from Christmas - don't know quite how that happened, somehow I just kept putting off using it! Any suggestions of something I can do with it, beyond sticking it on crackers?

Broccoli and stilton soup is a common suggestion but a recipe I've always been a bit dubious of - is it actually nice?

Hasn't it gone off by now? If it's got brown patches and is particuarly smelly I'd ditch it.

It looks a little worse for wear but blue cheese doesn't go properly off does it? It's just a bit more mature than nature originally intended?

I may have to open the pack and give it a try before making more concrete plans...

Risotto? Although be careful you don't add too much. Melt it over some chicken or steak? Mix it into a jacket potato? Make a blue cheese quiche? Steak and Stilton pie?

Blue cheese dressing? mix some with mayonnaise.

I love broccoli and stilton soup, made it just last week.
We're having stuffed mushrooms tonight, with stilton and bacon, I got the idea from Jamie's ministry, but am changing it to suit what I have in.

Of course it goes off. Stilton may be blue-veined and aged but it has a life. Four months on from Christmas and it's going to be well past its best with brown parts that won't taste so good.

Nice on pizza with finely sliced pear and watercress or rocket salad.
Pairs up well with sweet veg - roasted pumpkin & blue cheese salad...maybe with a few nuts.
Quiche or tasrt with roasted sweet veg
Try it with a digestive biscuit rather than a cracker...again the sweetness of the biscuit works.

It could well be past its best, although I had some gorgonzola for about a year.
DH quite happily ate it.

Use it in macaroni cheese or on cheese on toast with a cheddar too. Gives it a lovely sweet edge!

It is probably almost ready to make you gagg if you eat it as it is, but used in a cheese sauce it will lose a lot of its overbearing "flavour" and will be much more palatable. I know, because I have done it.

Gosh lots more posts! Well I attacked it and cut a bit of the outside off and it looked happier underneath - so far I've had some on crackers and some crumbled onto pasta sauce, tastes fine to me.

I'm still alive nearly 24 hours later - fingers crossed that continues!
