What to do with too many meringues?

I've posted in woodpussies about regularly having egg whites left over and what to do with them (and extra ideas welcome), but I also have a load of meringues and wondered if anyone had any recipes that include meringues, other than Eaton Mess (I was thinking of some kind of cake with layers or something).

You can make eton mess ice cream with meringues.

Take tub of good vanilla ice cream (slightly softened), rasberries and crushed up meringues. Mix together, still leaving the effect slightly 'swirly', and pack in a loaf tin or terrine and put back in freezer. Defrost for 30 mins in fridge, unmould and serve.

Just remembered I made chocolate bite size meringues the other day, they didn't last long! Just add a tablespoon of cocoa when using 2 egg whites.

You can make friands with egg whites. And nigella has a macaroon recepie in Nigella Express that I got off her website.

They store really well in plastic bags with the air sucked out with a straw. Weeks.

i keep mine in a tin...then all you need is a pot of cream and some jam or fruit to make pudding.

they never go off!! it's basically crispy air!

I keep them in a tin for ages too.
Last week I made a rhubarb fool and served it with meringues.
The sweetness of the meringues really complemented the tart fool.

Having thought about it, Cooking meringues is basically drying them out. So you end up with a dried egg white and sugar mix. Either of those is a keep in the cupboard job.
