What to stuff chicken breasts with?

Was going to do them with blue cheese sauce, potatoes and asparagus.

Is there anything I can stuff them with that would go well?

I think with the blue cheese sauce, I'd leave them unstuffed.
Sun dried tomatoes could work though maybe?

I'd suggest something simple like seasoned spinach perhaps. Blue cheese is a bit overpowering at the best of times so stuffing is probably not necessary.

Stuffed with 'roule' cheese is nice. But while your on this topic do you know how to cook stuffed chicked breasts perfectly without em drying out,which is always why im scared of cooking them.

Best results I've had is by wrapping them in foil and baking them; but even then, they are tough if cooked a moment too long.

Put the blue cheese inside and wrap them in pancetta... it helps to stop them drying out.

Yea i tried the pancetta thingy and it came out like rubber bands. I reckon the top chefs boil their stuffed chicken then crisp it up before serving, cos mine never look like the telly ones.

For stuffed chicken without it drying out, dampen a piece of greaseproof paper and cover then breasts in your frying pan :)

ok with the greaseproof paper and frying pan would that be like on a low heat,simmering. I assume it gives them some moisture to cook in.

I love chicken breast stuffed with boursin, wrapped in pancetta and simmered in a frying pan of red wine/chicken stock. Keeps them lovely and moist and you get the lovely pan juices as a sauce. Serve with new potatoes and salad, and you're done. Yum.

Right ive been roasting mine and that obviously where ive been going wrong so i will experiment with frying them on a low heat maybe one night this week. I love seeing it on Masterchef a perfectly,seasonsed and stuffed Chicken breast wrapped in something but it seems more difficult than it looks.

Crypes Have just cooked chicken breast stuffed with mozzarella, garlic and herbs... I put a little oil in a frying pan and put in the stuffed chicken. Then, I put a metal lid over it (a saucepan lid is fine) so it cooks by both frying and steaming. After approx 8 minutes I take off the lid and turn over the chicken then put the lid back on for another 8 minutes (again, approx as it depends on the thickness of the chicken breast etc). I cut the chicken breast into two pieces vertically so that I can make sure it is cooked through.

I marrinade haggis in whisky then stuff chicken breats and wrap in smoked bacon delish :-)
