As far as I konw, you should be ok to freeze them. Just maske sure that they are well protected from frezzer burn

A bit late for you, Binker, but you can freeze the raw dough so you can pretend to be a real Domestic Goddess and have the smell of baking shortbread wafting through the house on Christmas Eve

mum always made big batches up and froze them no problems - she even froze them with icing (but just usually a dot in the middle with a silver ball) and they were ok. She seperated layers with wax paper. Mmmmmm, shortbread cookies.....

Can I have a recipe - so I too can appear to be a domestic goddess on Xmas Eve?

to make 8 -12 little biccies -
175g plain flour
pinch salt
125g butter
55g caster sugar
and I add a few tsps of vanilla extract as a secret ingredient !

sieve flour and salt into large bowl. Cut butter into little bits and drop into the flour. rub in until like breadcrumbs. Mix the sugar with vanilla extract and then mix into the flour and butter mixture. Knead into a big ball of dough.Roll out and cut into little shapes with cookie cutters (Tchibo do a box of lovely Christmas & alphabet cutters for about £4.99). Prick them with a fork.
Lightly oil and dust with flour a baking tray and put the biscuits in the oven (gas mark 3 170C or 325 F )for approx 40 mins or until golden.Cool a bit then transfer to a wire rack. When cool you can sprinkle with some caster sugar, but I never bother.
They are yummy !
