Pudding recipe for my wheat & Dairy free guest................please!

Help - the only thing that I can think of is fruit salad! She's a lovely friend, so I'd like her to know that I've tried to make her a desert just a nice as I do for all my other friends.

What about chocolate mousse? The really simple kind with dark (no dairy) chocolate, and eggs?

With a big bowl of nice berries on the side.

Or does dairy mean she doesn't touch eggs?

Almond cake (ie ground almonds instead of flour) with jam and berries?
Pavlova with lots of fruit (though pavlova is a lot nicer with lots of cream)

Apple and blackberry pudding. Place a mix of the berries and sliced apple in bottom Of oven proof dish. Mix 4oz of dairy free marge with 4 oz of light brown sugar then when smooth add 1 Teaspoon of almond essence two eggs and 4oz ground almonds. Mix and pour over top of fruit. Bake til golden and fruit is just starting to ooze at the corner. Serve with Swedish glacé non dairy ice cream or custard made with oatly/ soy milk/ coconut milk all available in health stores and some supermarkets. Double quantities if needed depending on size. This serves 4

Pears poached in red wine, served with melted dark chocolate as sauce. I do this for my wheat and dairy free friends combo, and we all love it.

I've done this before
Mix 6 eggs, 1 cup of oil, 1 cup of sugar, 1 cup of powdered chocolate (pls make sure it's dairy free, check the ingredients list on the back of the pack, I've used Cadbury Bournville cocoa for quite some time and never had any problems), all in the blender. When mixture is smoth, add 100-150gr dessicated coconut, little by little, until it's difficult for the blender to mix (if the mixture gets too thick, add a little soymilk, don't worry, you won't mess this recipe up). Last, add the baking powder, one spoon is more than enough. Mix it slowly with a spoon. Heat oven to 180C/160C fan/gas 4, grease a medium sized tin and add the mixture, bake for 30-40 minutes.

Swedish glacé non dairy ice cream is yum. With meringues & fruit would be good pud. You can also make nice blondies with almond butter instead of flour & butter.

Oh I had a guest like this a couple of weeks ago

I did an almond and orange cake, served with a few raspberries. Got the recipe off allrecipes.co.uk (I would link but can't get that site to work at the mo). It's the one where you chop up two oranges and simmer for 30 mins, then pulp them.

It was delicious if I say so myself Grin

Had never thought of cooking puds with coconut milk. Must try rice pud. Sounds great. Wonder what cornflour blancmange with coconut milk would be like? Might try it with pineapple.
