I am not one to bake.. so when DD (well and DS2, who liked to hinder us in his onw special way ) 'bake' we used a bun mix. Naff I know.. but better than nothing. But I haven't got one in and I promised her we would bake.

So anyone got a nice receipe of something DD and I could bake please? Something nice and idiot proof please (it's me who's the idiot.. not DD, who is 7..)

SJ x

I have recommended this before - it's the easiest recipe in the universe but it's really, really lovely and completely foolproof.

8oz self raising flour
pinch of salt
4oz butter or margarine
2oz raisins
2 eating apples, peeled, cored and roughly chopped
3 oz granulated sugar
1 egg, beaten
2 tablespoons milk

Sift the flour and salt, rub in the butter until it resembles breadcrumbs

Stir in the raisins, apples and sugar

Add the egg and milk, mix with a knife. The dough will be soft.

Spoon the mixture into a greased 8" sandwich tin

Bake at 180C for about 50 minutes, or until a skewer inserted into the middle comes out clean. You may need to cover the cake with tin foil if it cooks too quickly on the outside.

Cool in the tin. When you turn it out, sprinkle with extra sugar.

get a bero book for next time! their shortbread recipe is yummy, and younger siblings can be eating the dough while she is cutting out shapes

Cornflake flapjacks. Totally idiot proof and simple to make. Start to finish about 25 mins. Just make sure they don't spend a second longer than 15 mins in the oven. (Cadbury's recipe - can't take the credit for this one).

4oz margerine
1tbsp golden syrup
4oz caster sugar
2oz oats
2oz SR flour
3oz crushed cornflakes

1 Grease a 7" x 7" square tin and preheat oven to 190c (170c if fan oven)

2 Melt marg and syrup together gently.

3 Mix in a bowl the sugar, oats, flour and cornflakes.

4 Pour the melted marg and syrup onto dry ingredients and mix thoroughly.

5 Pack mixture down evenly into tin and bake for 15minutes - NOT A SECOND LONGER!

6 Cut into fingers while still warm and leave to cool in tin.

7 Remove from tin and eat, then bake another batch before anyone realizes!!!

Cheese scones: the easiest thing in the world.

8 oz self-raising flour
pinch salt
1 tsp mustard powder
1 tsp baking powder
1 1/2 oz butter
4 oz grated cheddar
1/4 pint milk

Sieve flour, salt, mustard and baking powder. Rub in the butter until it looks like breadcrumbs (favourite bit for the children). Stir in most of the cheese and enough milk to make a soft dough. Roll out to 1/4 inch thickness and cut into rounds. Place on a greased baking tray, brush with milk and sprinkle remaining cheese on top. Bake at 220C / GM 7 for 10 mins.

Eat them while still warm so the butter melts. May have to go and make some myself now!

SleepyJess · 12/02/2006 12:31

Oh! I want to bake them all!! Which would be FAR too ambitious for me even if they ARE idiot-proof..

DH off to Tesco to buy cocoa powder.. thought we had some.. and DD already set on making the choc mountains today...

Although no good for today I would realy reccommend the usbourne books 'Fairy cooking''easter cooking' 'christmas cooking' etc. they are about £4 each and are often on 3 for 2's in bookshops.
I use these a lot with my class for cooking sessions and have had success with everything we have tried. The craft books are great too - with a great variety of activities

SleepyJess · 12/02/2006 15:31

Cheese scones just came out of oven.. they are yummy! Thanks for the fab recipe FrannyandZooey.. and mixture for chocolate mountains chilling in fridge.. to be taken out.. covered in icing sugar and baked in balls at twenty to five! (Thanks Cod)

DD has gone to her room to relax with Barbie after such a frenetic baking session! Sure beats Tweenie bun mixes.. thank you!

Oh God I've eaten three scones... and I'm doing Slimming World.. and this was already a bad and 'synful' week... somebody stop me!!

Oh COD those chocolate mountains are to die for!! I think mine and DD's were too big though as we didn't get 12 out of the mixture (got 9),.. but have just eaten one (oh dear re slimming world!! ) and it was GORGEOUS! They look impressive too don't they! Can't believe DD and I produced them from scratch!

Nearly forgot about them in the chilling stage (so they had longer than 2 hours) because DS2 developed a scary fever and I had to get it down before attending to the mixture in the fridge.

Thanks again for all the recipes. xx

Ah yes I did forget to mention the incredible addictive qualities of hot cheese scones. Next time make them with wholemeal flour - they are still scrummy and you can feel smug instead of guilty

Aero · 13/02/2006 14:55

Cod - would ordinary granulated sugar do?

Also is 170c for a fan assisted or conventional oven?

I sooooo want to try these.

Rock buns (or fatty makers as they were known oin our familu)

it's a simple rub in recipe, never goes wrong

Aero · 13/02/2006 15:20

Thought it might be for a fan - no need to adjust then. Thank you.

Aero · 13/02/2006 16:21

Just made the cheese scones - yum. Ds2 is having the best time with the little bit of leftover dough.

About to embark on the mountains!

Tommy · 13/02/2006 16:38

am going to try those cheese scones tomorrow for valentines lunch
