Good plans all round. I like the bangers and mash idea- have had rather a lot of pasta this week. Are vegetarian sausages tasty though? Or could I make some that would be? Or maybe veggies could have huge portabello mushrroms instead of sausages?

Cauldron Food do some nice veggie sausages - well the cheese and leek ones are nice (wouldn't go with the gravy though). I think they do a 'fake meat' one too.

I don't like fake meat - I'm a vegetarian, why would I want to eat something that tastes like meat? But some people do.

Want basic really as have to tidy the flat in preparation too which could take hours on end. I'm going with bangers and mash but replacing the bangers with lovely big garlicky portobello mushrooms for the vegetarians as I don't think I'd like fake meat if I was a veggie. Whereas portabello mushrroms are yum. Thanks for all the help, everyone.

I love homity pie - and it's ever so easy as well ... and your friend would be hard pushed to find too many veggies in it

Homity Pie

300g wholemeal shortcrust pastry
350g potatoes
450g onions
3 tbs oil
25g butter or marg
15g chopped parsley
100g grated cheese
2 crushed garlic cloves
1 tbs milk
salt & pepper to taste.

Roll out pastry and use to line 6 4" individual tins or foil dishes. Boil or steam potatoes until tender. Chop onions and saute in oil until really soft. Combine potatoes and onions, add butter, parsley, 50g cheese, garlic, milk, and season well to taste. Cool, then use to fill the pastry cases. Sprinkle with remaining cheese and bake in 220C oven for 20 mins, until golden.

Alternatively use to make one 8" flan. Bake for 25-30 mins
