Freezing fresh pineapple?

Do you/can you? I cut up a whole one yesterday, forgot that I had, and no one wants to eat it today Angry!

Can I bung it in the freezer or will it go mushy? Thanks.

I've always frozen it and it's fine. I've only used it in smoothies or to cook with though, so I don't know if it would be nice to eat raw post-freezing.

I've got some in the freezer which i put there before we went on holiday. Now you've reminded me i'll get it out as we're having pizza tonight.

you can, but it goes a bit soft when thawed. still tasty.

thank you! might eat a bit later then bung the rest in the freezer. I fancy having a go at Pineapple Upside Down cake one of these days - would it be ok for that, or too watery?

Hmmm. My immediate reaction was going to be 'fine!', but thinking about it, too much liquid might bugger up the cake a bit ? you have to be quite precise with baking, don't you?

Could you dry it out in some way beforehand, if that's not too weird? I'm not sure how Grin ? maybe in a frying pan on a very VERY low heat, to see if some of the water evaporates off?

Well the pineapple that i defrosted worked fine on pizza last night. It wasn't soft at all.

Maybe dry it off on some kitchen roll before using it on a Pineapple Upside Down cake (just to make sure).

thanks all! am sick of eating pineapple so it has been stashed away in the freezer now.

will remember to defrost, pat dry and possibly caramelise in pan before attempting baking with it Grin
