OK, I think I can see where I'm going wrong. Faffing about too much.

Boil cream, pour over chocolate to melt, cool a little, pour over room temp cake, leave well alone until cool.

I ganached today. Pic on profile. It had a few small bubbles but was pretty good and shiny.

I'm not expert but I do love doing it. My method was heating the cream & choc at same time in bowl over hot saucepan of water. Stirred loads. Then when all the choc had melted took it off heat, and covered in clingfilm until I was ready (cake had cooled down) to pour. It is certainly not perfect but looks ok! I was going to cover in chocolate curls but couldnt be bothered in the end.

I haven't done it yet. Going to cook a hazelnut/almond chocolate torte tomorrow and then ganache on top.

It has to be perfect, like glass though, or I'll throw my toys way out of the pram. [pouts]
