I'm a recent Approved Food convert but somehow found myself with 3.5kg of suet mix - like this. I couldn't resist - it was so cheap! But does anyone have an idea of what to make with it other than syrup puddings? Can you make dumplings with it, or suet pastry? How should I alter recipes that just call for "suet"?

I bought a pack of that too! Yes, you can just use it to make dumplings. Had some for the first time this week and they were really nice.

Should also be fine for roly polys, steak and kidney puddings etc.

It's wheat flour, 28% beef suet, raising agents and salt.

The instructions suggest you can just add water and mix to make "puddings" - I'm guessing pastry for a steak and kidney style pudding? But you can also make jam roly poly; never made that before and didn't even know it had suet in it!

If adding water leads to suet pastry then I doubt it'll easily convert to dumplings, will it? They're pretty different in texture!

Yes, just added water and a little bit of baking powder just to be on the safe side (I do that even if I use self-raising flour). We added parsley and they were yum. The proportions of flour and suet are the same for dumplings and for suet pastry so should be fine for that too.

I would find a recipe for the right number of servings then add the flour and suet weights together and use that amount of the suet mix. So, I think 110g flour and 55g suet should make 8 dumplings - weigh out 165g suet mix and add water gradually to get it to the right consistency.

Thanks I shall get experimenting - with 3.5kg of the stuff to play with if there are a few errors it doesn't really matter too much! Grin

yup, dumplings, pastry for sweet/savoury puds will all be good.

you can bake suet crust for savoury pies too
