Diabetic friendly cake recipe?

Can anyone help me with this.....have made one attempt so far, using artificial sweetener and it did not rise at allllll!

anyone have any recipes that they can share, Im after a sandwich cake rather than loaf.......?

All of my friends who are diabetic just eat normal cake, so maybe ask the person what they would usually eat?

Yes, Diabetes UK does not recommend "diabetic food", but normal food in sensible portions, but there are still sensible ways to reduce sugar in things for folk with diabetes as well as those without.

I'd recommend a sugar free variation on a french almond cake - I make it for a low carb diet (the use of ground almonds instead of flour gives less of a blood sugar impact). Additionally there has been some recent research showing that almonds may help to control blood sugar - too small a study to be conclusive perhaps but worth looking into.

This is a good recipe and works well if you substitute for the sugar french almond cake

ah thank you so very much for your replies guys, I will check out those links. To be honest, trying to substitute with the sweetners, even the "natural " one, has been fairly disasterous, especially as it leaves such a hideous after taste. I will chekc out those links and get the customer to chat to her mum re. smaller portions of normal cake! Thanks again Grin

If you are a business, I would suggest having a "no diabetic foods" policy in line with the Food Standards Agency and Diabetes UK advice, like Hotel Chocolat.

Cake making is essentially chemistry. Thats why the subsitutes dont work.

DH is diabetic and has cake sometimes. But he finds portion control hard.

A lot of sugar free cakes and biscuits are made with apple sauce....which is sugar by another name.
