I have family staying next week - one eats fish but no meat, the other meat but no fish. So veggie it is, and I'm crap at vegetarian.

  • Can't be curry because one night we'll be going out for a curry.
  • Can't be mushroom risotto because I think I've done that their last two consecutive visits.
  • Must be mostly makeable in advance - don't want too much faffing in the evenings.
  • I hate lentils.

Can anyone think of anything purleease?

Delia roasted vegetable lasagne is bloody gorgeous. Ditto her souffled macaroni cheese. what about Hugh fEarnely Whittingstall's spinach, penne and cheese spouffle?
I'm on a roll now - I would do a tapas platter - spanish omelette (make in advance, is delish cold) manchego cheese drizzled with fancy honey, figs, nice bread, chilli prawns for the fish eaters, big bowl of salad - job done. Jamie Oliver does yummy stuffed peppers in his tapas recipe for 20 minute meals. I've done the whole meal and it actually takes about 30 mins but is really easy. WIll post if you like.

Thanks shoppingbags - I actually have that Jamie book but it hadn't occurred to me to look in it Blush. I do like the tapas plan lots.

I made vegetable strudel tonight which was all prepared in advance apart from spooning into the filo pastry and brushing with olive oil. It looks fancy and needs little in the way of accompaniments. I steamed broccoli, cauliflower and carrots earlier, finely chopped them until almost mush added some tinned beans which had been drained and mixed through a homemade tomato sauce which had been in the freezer. This was all done ahead of time. At dinnertime I preheated oven to 180deg and prepared my filo sheets. I used one rather large one and folded it on itself then spooned in the filling, rolled it up and tucked in the corners. I brushed it with olive oil (can use melted butter) and baked in the oven. After 15mins was ready and I topped with more tomato sauce.

I have a recipe for stuffed romano peppers (think modern middle eastern rather than 1970's ...feta, mint, preserved lemon - quite fancy and a huge hit with all the meat eaters we had at a recent get together...prep in adance not a problem. Let me know if you're interested.

This is amazingly easy, tasty and impressive and just needs 'constructing' and bunging in the oven, innards can be prepared in advance. I serve with Deila's braised red cabbage and apple recipe, also done the day before Smile
