Cooked new potatoes.

I though I was feeding more people than was last night, so I have a pan of cooked new potatoes. Apart form a potato salad, what can I do with them? Could I make a sort of dauphinois, or would th skins and waxiness not work?

They're terrific in spicy dishes. I make a Prawn and Green Pepper Curry out of the Levi Roots caribbean cook-book and that requires par-boiled (or in your case fully boiled) potatoes as one of the ingredients.

Or how about a Frittata or Spanish Omelette? Slice the potatoes and fry them off to colour up a little. Then stir into some beaten eggs flavoured with tomato, spring onions, chilli peppers and some grated cheese. Pour this into a pan cook until set and then grill untill risen and golden... serve in wedges with salad.

Slice and sauté them. A couple of minutes before they're done, add some chopped rosemary and garlic.

www.jamieoliver.com/recipes/lamb-recipes/roast-rack-of-lamb-with-crushed-potatoes - crushed potatoes from Jamie OLiver (originally saw them in 30 minute meals) are my favourite.

It is similar to the method I linked to above, but the 30 min meals is slightly different. Get some olive oil hot in a frying pan, lightly crush the potatoes with a fork, and then put in pat, and cover with a heavy lid. Move the potatoes around every so often, having the lid makes them scorch a bit in places. Then serve with some more oil, sea salt and chopped parsley.

I sauteed some cooked new pots with some onions, they were gorgeous. I don't think they would work for Dauphinois as I think that initially cooking them in the lovely garlicky cream is what makes them so nice.

Or just reheat and eat them with some nice bacon or salmon in sauce (watercress sauce is best IMHO)

I usually saute them and serve with some quiche, chicken or salmon and salad.

I use up cooked potatoes by frying them in olive oil in the pan (sometimes with onions)-gorgeous with sausages and beans or chicken kiev and green veg.

I do a similar thing to ChiefPotterer, but I cut them in half, roll them in olive oil, sprinkle with salt and pepper (occasionally herbs) and let them cook in the oven. Go with just about anything from quiche to chops

Saute with onions and make tortilla.
Serve with a big salad with fresh corriander snipped in.
