Went a bit mad in a Japanese supermarket, bought some tofu which is apparently organic and good, have never cooked with it, not been a massive fan when I've tried it - what the hell do I do with it???

Stir fry is always a good option. You can marinate it in seasonings of your choice, chop it into chunks and it cooks in minutes.

Or you can shove it through the liquidiser with yummy things and bake it in a flan/cheesecake etc.

If you don't want to use it all up, rinse it off, and keep it in the fridge in a plastic container, covered in water. If you change the water daily it'll keep for up to a week.

Ooh loads of good things. My mum in particular cooks with it all the time:

  • blitz it then mix with breadcrumbs, soy sauce, sesame oil and salad onions and pan-fry to make tofu burgers (even better with some chopped walnuts added)
  • bake little cubes on an oiled sheet for an hour to make croutons for soup or salad
  • cut into french fry shapes and fry to make tofu chips
  • crumble or purée it and "scramble" with mushrooms
  • fry some pork mince and onions, add chili paste, soy sauce and stock, then add the tofu - it will all braise together nicely. You can replace the pork with aubergine to make it vegetarian (vegan in fact)

What sort of tofu is it?

If it is the silken variety then can be difficult to cook because it has so much liquid in it. You can firm it up by squeezing under some heavy pans with some layers of kitchen roll around. Braised tofu (get in tins from H&B) is a good option for stir fry, risotto or stuffed veg

Roll in egg and seasoned flour and fry then add to stir fries or fajitas

It can be boring without a marinade or crust

First you need to know whether it is firm tofu or silken/soft tofu. Firm can be used for all sorts of recipes, silken is best for desserts etc as it is too fragile to cut into cubes and fry.

For firm tofu, my favourite things to do with it include tofu satay, thai red curry with tofu, tofu scramble and tofu burgers. Loads of recipes on the net.

remember, it's all about the flavourings.
