Toddler appeal veggie burgers anyone?

Recipes please?

Thinking I'll make them in to small balls (like Falafel) in hope that DS will think they're yummy....these days he seems to pretty much reject anything that's a compilation of things like veg stew or soup, which are the sort of things we live on.

dd1 (5)ected stew, soup etc I now give these dishes different names - stew is now dinosaur dinner, lasagne is pirates plate etc and she eats them up with relish If I accidently call stew stew she insists she hates it !

I usually buy my veggie burgers pre made sainsburys do very good ones with no hydrogenated fat. Tofu is very versatile and mixed with onions and whatever else you like can be shaped into balls and ovenbaked or fried. my daughters love it mixed in with a packet of stuffing shaped into balls and baked. Though it is also good mixed with grated carrot, onion and a small amount of green (cabbage, spinach)

Mashed potato, carrots and swede, and sweetcorn, need to be fairly 'dry', mash an egg in, make into patties, roll in breadcrumbs and oven bake until cooked.

Big Beany Burgers (makes 2)

2 teaspoons oil
1 small onion
1 small garlic clove, crushed
I teaspoon ground cumin
1 teaspoon ground coriander
10oz can kidney beans, drained and rinsed
A little flour

Heat half of the oil in a pan and gently fry the onion and garlic until lightly browned. Add the spices and cook for 1 minute.

Drain and rinse the beans, add to the onion mixture, and mash (or blitz briefly in a food processor). Divide the mixture in half, shape each half into a burger shape using floured hands.

Fry the burgers in the remaining oil for 3 - 4 mins each side, or until browned.

Bean and Feta Falafel (4 toddler portions)

10 oz broad beans
One onion, chopped
teaspoon ground cumin
a teaspoon ground coriander
4oz feta cheese, drained and chopped
1 tablespoon sunflower oil

Boil the broad beans for a few minutes, drain, then add to a food processor with the onion, spices and feta (or mash the ingredients in a bowl).

Divide the mixture into 12 portions, then press into oval patties between floured hands. Heat the oil in a frying pan and fry for 5 minutes until each side is golden.
