Bicarbonate of soda in baking?

I've accidentally ordered bicarbonate of soda instead of baking powder so can't make muffins now can I?
I have all the ingredients and a disappointed DD so what can I make?

Anything quick and easy (and suitable) please as I also have 1 yo DTs!

If you use bicarb instead of baking powder, you need something acid to activate it. Do you have any cream of tartar? If not then do you have any natural yogurt that you can replace some of the liquid with?

No cream of tartar and only flavoured yoghurts for kids!

One bloody ingredient and I botch it up! Can you tell I don't usually bake? Blush

Or lemon juice might be OK depending on what kind of muffins you are making. Do you have a neighbour you could borrow some from?

Have you got self-raising flour or plain?

Why would it depend on the kind of muffins I'm making? What sort should I be making? I have the recipe for apple bran muffins and normal muffins with added raspberries..

If the recipe said plain flour, and you use self raising instead, you shouldn't need the baking powder. They may not be perfect, but it should be fine.

Just because lemon juice in chocolate muffins would be a bit bleurgh. But as chops says, if you use SR flour they should be OK. Or add 1/2 tsp bicarb and a tablespoon lemon juice to those two recipes to give them a bit of extra oomph Smile

Lemon drizzle muffins:

250g SR flour
1/2 tsp bicarb
1 tbsp lemon juice
85g sugar
1 egg
240ml milk
1 tsp grated lemon rind
85g melted butter

Icing:
3-4 tbsp lemon juice
85g sugar
