Quinoa- new ingredient, any ideas?

In an effort to eat more protein, I've decided to try quinoa, but have never cooked with it before. Made it tonight using my couscous recipe - added some veg, garlic, spices etc and it was ok, but I think I used too much water.

I really want to make porridge with it as well.

Anyone know any good quinoa recipes and any tips for getting the best out of it?

I've never personally cooked it but I love it as a salad base, great with raisins, feta, peppers, spices and coriander. Some good looking recipes here www.quinoasalads.com

Ooh yes, I love quinoa. My fave recipe at the moment is on the this page. It's kale with stir fry kale, cashew nuts and ginger and garlic.

Yes, I roast beetroot, peppers, red onion, sweet potato. Add it to cooked quinoa add some passata and garlic.

Delicious and healthy.

But stay close to the loo the next day Grin

For the quinoa;
1 cup quinoa cooked in vegetable stock according to the packets instructions and cooled to room temperature, mixed with 1 diced jalapeno, 1 tablespoon minced coriander leaf, 1 tbsp extra virgin olive oil, juice of 1 lime and seasoning.

For the sweet potato:
1 large sweet potato, peeled and cut into 1/2 inch dice and roasted for 15 minutes at 220.

For the tomato dressing:
2 tomatoes, skin removed.
3 tbsp plus 1 tsp olive oil
1 tbsp rice vinegar
1/4 cup chopped coriander leaf
1 tsp light honey

in a small bowl, toss the tomatoes with the 1 tsp of olive oil and roast for 15 minutes at 180. put them in a processor, add the vinegar, coriander and honey and whizz it to combine. With the motor running slowly add the 3 tbsps olive oil to emulsify. Season.

Tear 2 corn tortillas into strips and fry in canola oil and season well with cayenne pepper.

To serve, place a quarter of the sweet potato in a ramekin, top with half a diced avocado, top with a quarter of the quinoa, and turn it upside down onto a plate so the quinoa is at the bottom. Place a couple of the tortilla strips on top, then a small handful of cress, then drizzle some of the tomato dressing over it.

Thanks for the recipes - going to try them this weekend. However, made quinoa porridge this morning and can't recommend it! Yuck.

bleurgh, did it have milk in it?

I've cooked it with chopped apple and cinnamon (and water) and that was alright.

I like the superfood salad from Leon. Haven't had it since moving abroad but from memory it has blanched broccoli, peas, mint, feta, avocado and cucumber in a quinoa base.

Yy to Leon salad- I've had that and it's fab. crikey it did have milk in it, it took bloody ages to cook and I added prunes, which I normally have in my oat porridge. The combination was truly revolting - too sweet, but strangely savoury at the same time.
