Basmati Rice

Is it safe enough to cook basmati rice, freeze it then defrost and reheat it?

I batch cook meals for DS1 (11mths) due to allergies, so am doing this today, and would like to do the rice side dishes too, as my aunt looks after him on the days I'm at work and I like to make her life as easy as possible, one less thing for her to do.

I might risk it for an adult in perfect health but I would not risk pre-cooking and reheating rice for a baby with allergies.

I admit that I am not wild about freezing rice. I think it probably is okay if you do it as soon as its cool and then heat to piping before serving again but...

... having said that, I made DS a risotto recipe using basmati rice from an annabel karmel book and it said it was freezable so I did freeze it and he did it (heavily heated first so it was zapped) and he was fine.

what allergies does DS have? We have taken to giving DS couscous mixed in with a lot of things as its very easy to prepare - dessert spoon of couscous in a small cup. one and a half dessert spoons boiling water. Leave 3 minutes and mix in with whatever he's eating.

Basmati rice is frozen in our house all the time without ill effect. The harmful bacteria which grow in rice grow when its not cooled quickly enough so I freeze immediately after cooking or cool quickly in the fridge first. I always defrost in fridge and heat through until piping hot.
