Need a Vegan nut roast

I need a really nice vegan nut roast/meatless loaf for Sunday dinner. I have searched google and now I'm bogged down with so many recipes I can't choose. So.. has anybody any firm favourites? Thank you.. really need help on this one :)

nuts - hazelnuts, brazil nuts
lentils
marmite or veg bouillon

fry onions, add lentils and veg stock. When lentils cooked stir in chopped nuts. Bake in oven for 40 mins

Cos I'm doing traditional turkey dinner on Sunday for the family and this is my first major family meal as a vegan, so I want to just substitute my turkey with nut roast so it doesn't look like I'm making a big fuss. I've never had it before but there isn't much I won't eat so I imagine I will like it OK :)

ok, that makes sense.

1 cup red split lentils
2 cups vegetable stock
1 bay leaf
1/2 cup unsalted cashew nuts
1½ tbsp olive oil
1 large onion, finely chopped
1 large or 2 small leeks, trimmed and finely chopped
1 red pepper, deseeded and chopped
100g mushrooms, finely chopped
1 garlic clove, crushed
1 tbsp lemon juice
75g mature Cheddar cheese, grated
100g wholemeal breadcrumbs
3 tbsp chopped fresh parsley
1 egg, lightly beaten
QUICK TOMATO SAUCE:
1 tbsp tomato purée
½ tsp paprika
1 tin chopped tomatoes
150ml dry red wine
¼ tsp dried mixed herbs

  1. put lentils and stock and bay leaf into a pan and bring to the boil. Reduce the heat to a gentle simmer, then cover and cook for 15 minutes until the lentils are soft and pulpy and the stock has been absorbed. Stir once or twice towards the end of to prevent the lentils sticking. Discard the bay leaf.
  2. While the lentils are cooking, put the cashew nuts in a non-stick frying pan and toast over a moderate heat until lightly browned, stirring frequently. Set aside to cool, then roughly chop. Preheat the oven to 190°C/gas 5. Line the bottom of a loaf tin with a piece of greaseproof paper.
  3. Add the oil to the frying pan and cook the onion over a moderate heat for 5 minutes. Remove half the onion and set aside for the sauce. Add the leeks, red pepper, mushrooms and garlic to the pan and cook for a further 5 minutes, stirring occasionally, until tender. Stir in the lemon juice.
  4. Tip the lentils and vegetables into a mixing bowl. Stir in the breadcrumbs, cashew nuts and 2 tbsp of the parsley, followed by the grated cheese and beaten egg. Season to taste, then spoon into the loaf tin. Level the top and cover with a piece of lightly oiled foil.
  5. Bake the loaf for 30 minutes, then remove the foil and bake for a further 30 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool and set in the tin for 10 minutes before turning out and cutting into thick slices.
  6. While the loaf is baking and resting, make the tomato sauce. Put the reserved onion and remaining sauce ingredients in a small pan. Bring to a simmer for 20 minutes, until slightly reduced. Stir in the remaining chopped parsley before serving with the loaf.

Yes, you can. If you sub a tbsp or so of water til it binds well and a teaspoon of mustard it will do the same thing.

I mainly cook for veggies. It seems I'm bad at converting those recipes to vegan :(

Is Paxo Sage & Onion vegan? I made a fab but roast by adding, simply, chopped nuts to it at its 'watered' stage. Then baking as per.

I love nut roast. Sunday dinner is sorted! I am getting more and more Hmm about meat in general, and just love this kind of food.

Thanks luisgarcia thinking if I just slip in my nut roast at the table, anyone can help themselves to it, then it won't make me look a freak! i don't miss meat one little bit but when it comes to turkey and ham I will struggle :( as it was my favourite meat meal, but the benefits of a vegan diet outweigh one meal, and the bonus is in four weeks I have lost 16 pounds! Thanks for all the tips :)
